Carlos is the creative force behind the award-winning Bar Amour in Oslo that rose to fame from a bordello to a Michelin star restaurant in under 18 months. With an extensive resume that has seen him through many of the worlds best kitchen, including a stint at Maemo’s very own Test Kitchen, Carlos now focuses on bringing his fusion of Norwegian and Portuguese flavours into the world, while sharing the distillations of his years of craft and learning in some of the most inspiring restaurants we have seen.
